Preparation Steps
First things first, let’s get our ingredients ready. You’ll want to start with the spinach. Make sure you have 500g of fresh spinach, as it’s the star of this dish!

Next, heat some olive oil in a pan. You’ll need about a tablespoon or so. Once the oil is hot, add 1 onion, finely chopped, and 1 clove of garlic, minced. Sauté them together until the onion becomes soft and translucent. This should take about 5 minutes.

While that’s cooking, let’s prepare our egg mixture. In a bowl, whisk together 3 eggs, 120ml of milk, and 150g of flour. Season with salt and pepper. If you like a little kick, add some chili flakes at this stage.
